A great treat after a long hot day this summer and easy to prepare! Ingredients: 4 cups fresh strawberries (or fruits or berries of your choice) 1/3 cup sugar 1 lemon, juiced ½ teaspoon cinnamon 2 tablespoons cornstarch 1 pkg. Betty Crocker Sugar Cookie Mix 1 stick plus 3 tablespoons butter, softened 1 egg 1 teaspoon vanilla extract Preheat oven to 375 degrees, spray an 8 X 10 inch baking dish with cooking spray. Add berries to the dish. Sprinkle sugar, lemon juice, cinnamon and cornstarch over berries. With a spoon, mix gently to coat the berries. In small pieces, add the 3 tablespoons of butter on top of the berries. The berries are “prepped”! For the “cobbler” portion of this recipe – Mix sugar cookie mix, 1 stick of softened butter, 1 egg and vanilla extract in a large bowl. Using your hands, mix well until you’ve formed a soft dough. Grab a piece of the dough about the size of a golf ball and press it into a pancake shape. Place your dough pancake on top of the berries. Repeat this process until most of the berries are covered. You don’t have to cover the berries completely, and you can overlap the dough. ( you might have a bit of dough left over) Place cobbler dish in preheated oven and bake for 25-30 minutes, or until crust is golden brown. Let cool for 10-15 minutes. Serve with some vanilla ice cream or whipped cream and enjoy!
