Island Iced Orange Rum Cake 1 – package 2-layer-size orange cake mix 4 – Tablespoon dark rum 1 – 3 3/4oz. package instant vanilla pudding mix 4 – eggs ½ – cup cooking oil ½ – cup orange juice In large mixer bowl, combine cake mix and pudding mix. Add the eggs, oil, ½ cup orange juice and 4 tablespoons dark rum. Beat on low speed with electric mixer for ½ minute. Then beat on medium speed for 5 minutes, scraping bowl frequently. Pour into greased and floured 10-inch fluted tube pan; bake in 350 degree oven for 45 minutes. Enjoy! Recipe contributed by Ted Ritts
